Everything we eat has a consequence. For the vast majority of Americans, processed and packaged foods are staples of our diet. This industrialized eating habit is blamed for one of the most dizzying trends of our current century - the rise of chronic and degenerative diseases.
Building stronger, healthier bodies today may require prehistoric eating habits. That doesn’t mean chasing down wild animals with a spear, but it does mean consuming foods that can be hunted, fished, and gathered during the Paleolithic era -- meat, fish, shellfish, eggs, tree nuts, vegetables, roots, fruits, and berries.
Human bodies have not kept pace with industry. Scientific studies reveal that processed and refined foods are actually ill suited for our genetic composition. In fact, advances in modern agriculture and food processing result in a plague of health problems including coronary heart disease, diabetes, cancer, osteoporosis, obesity and psychological dysfunction. By avoiding excessive consumption of high-glycemic carbohydrates, which raise blood sugar too high and much too rapidly, we can greatly reduce the incidence of diseases such as diabetes. Although insulin is an essential hormone for life, high-glycemic carbohydrates produce inordinate insulin responses. Continued and chronic elevation of insulin levels lead to hyperinsulinism, which has been positively linked to obesity, elevated cholesterol levels, blood pressure, mood dysfunction and a Pandora’s box of disease and disability. A low-glycemic diet severely blunts insulin responses therefore decreasing the chances of cancers and heart disease.
This begs the question, “What should we eat?”. As a rule of thumb, low-glycemic foods have limited shelf life and are found on the perimeter of the grocery store: meats, vegetables, fruits, nuts, and seeds. By avoiding starchy, sweet, or processed foods like bread, pasta, rice, potato, grains, and desserts, you will ingest a reduced caloric intake while providing ample nutrition for rigorous, body slimming activities.
